Mother’s day at Pine Gulch

Last weekend Wendy put her foot down and said “I want a big-screen TV for Mother’s Day!” (And I thought I was going to have to wait until Father’s Day.) She sent me out Saturday morning with orders not to come back without one. A trip to Fry’s later, and we have this nice Toshiba 37-inch LCD TV:

A little hard to see, but I assure you it’s in there somewhere. It’s not the biggest TV made, and thankfully not the most expensive, but it has a great picture, and now we can finally enter the realm of HDTV.

I did some cooking yesterday. We plan to give Wendy a big steak-n-taters dinner tonight, and these were supposed to be the desserts, but we weren’t able to resist trying them.

Key lime pie is about my favorite kind of pie. I’ve never tried to make it, so yesterday I thought I’d give it a shot. I couldn’t find any key limes, so I just used the regular kind. Don’t believe it when the purists tell you that you have to have key limes to make this pie. The recipe I used turned out just as tart and good as any other key lime pie I’ve ever had.

I also made an apricot nectar cake. I called Leigh Ann and Dad to try to get Granny’s recipe, but Leigh Ann didn’t have it, and Dad wasn’t answering the phone. So I checked the Internet and found a recipe that seemed like it would do. I remember Dad had told me that the cake was made with a yellow cake mix, substituting apricot nectar for the water in the recipe, and I found several similar recipes that seemed to fit the bill.

The recipe I found called for just eight ounces of apricot nectar, but the can holds nearly twelve ounces. So I figured I would just use the whole can, and bake the cake a little longer if necessary. It turned out just right, moist and flavorful. Not bad for a first try.

Of course, the best part is the lemon icing. I just love that stuff. Next time I think I’ll make an extra gallon to drizzle all over everything I eat.

    I have the recipe!
    Granny’s Lemon Supreme Special
    1 box Lemon Supreme cake mix
    1 cup apricot nectar
    3/4 c. Crisco oil
    4 eggs
    1/2 c. sugar
    Mix cake mix, sugar, oil, and nectar together. Add one egg at at time. Bake at 350 for 1 hour.

    Mix one cup powdered sugar and the juice of one lemon. Pour over cake while still warm to make a glaze.
