happy birthday granny

a week ago today i made an apricot nectar cake and wrote that i had tried without success to get granny’s recipe. cousin ann then wrote in to say

I have the recipe!

Granny’s Lemon Supreme Special
1 box Lemon Supreme cake mix
1 cup apricot nectar
3/4 c. Crisco oil
4 eggs
1/2 c. sugar
Mix cake mix, sugar, oil, and nectar together. Add one egg at at time. Bake at 350 for 1 hour.

Mix one cup powdered sugar and the juice of one lemon. Pour over cake while still warm to make a glaze.

the recipe i used was almost identical to this one; i believe it differed only in the recipe for the glaze: two cups powdered sugar and two tablespoons lemon juice.

when i made it, i couldn’t resist using the entire can of apricot nectar, about 12 ounces instead of the 8 called for in the recipe. turned out just as good.
